More than one hundred fifty years ago, Alexis Cayer settled on virgin land surrounded by mountains and valleys, the future site of Portneuf, which he would come to help build. In passing down his vision and knowledge he became patriarch to a family of landscapers, builders, farmers, and finally, cheese makers. At Alexis de Portneuf as Fine Cheese Makers we are committed to preserve the crafted quality and authentic character of every single specialty cheese we produce. True to tradition, we take special care during each stage of production. For us no machine can replace human intuition, experience, and sensibilities when it comes to the sight, smell, touch and taste of a cheese to determine when it is just right.
